Job Description

Aunt Gussie's Cookies manufactures upscale specialty baked goods and is searching for a SCRATCH BAKER. Needed for high volume cookie production (2000lbs+-) daily.

Qualifications

The ideal candidate will be knowledgeable in the following

Mixing and baking of cookie doughs and able to work at a fast pace.
Responsible to supervise your team in order to complete daily production.
Working well with others and punctually is important.
Knowledge of food safety is helpful.
You need to be able to scratch mix and understand the science of baking.

Aunt Gussie's Cookies currently runs two production kitchens using cookie/dough extruding equipment. Generally Monday thru Friday, daytime hours.

Requirements

Ability to lift a min of 50 pounds frequently and push/pull heavy equipment
2-5 Year Baking Experience for bakers
2 Years Mixing Experience
Familiar with bakery equipment
Possess basic math skills
Ability to work in a fast-paced environment
Ability to work efficiently with little or no supervision
Ability to Delegate instructions to assistant bakers /production staff
Ability to clean with detail
Ability to maintain documents in order and perform baking duties
Gather ingredients as needed
Scaling ingredients for Production orders
Mix, make and bake product using recipes, cookie mixers and machines.
Manage/Oversee helpers in production and cleanup
Document batches completed with appropriate lot numbers
Comply with all GMP Regulation and Food Safety rules
Break down machines used/clean up the area

Back in 1980, Marilyn Caine founded the company under the name Marilyn Specialties. She would bake cookies in her home kitchen every night, and in the morning take the bus to NYC to deliver her delicious cookies to specialty Mom & Pop stores in the city; then 3 months into her venture, Macy's gave her a big order and that's how her cookie shop started to grow. Although the company has always been baking specialty cookies (oversize decorative cookies back then), Marilyn always had this idea in mind: to bake "healthier, better or you cookies", a concept unheard of at the time; she was concerned about some diabetic relatives, so she went back to the family collection of artisan recipes, and started tweaking them, and that's how Aunt Gussie's Sugar Free cookies were born. But she did not stop there; she certainly was a woman ahead of her time, she introduced Spelt, an ancient grain for consumers sensitive to common wheat, and a few years later working alongside with her son David, opened a dedicated Gluten-Free kitchen, for the company's new specialty line.

Today, after almost 40 years, the company is proud to maintain its original commitment to its consumers: to bake only the best cookies, crackers using only premium simple ingredients. Aunt Gussie's continues to grow on the consumers' demand for truly "better for you products", and is proud to introduce a new line of No Sugar Added Granola; maintaining as always high-quality standards and delivering great taste.
